August 1 – Raspberry Cream Pie Day

The special days for each month never cease to amaze me!   Don’t know who decided what days to assign to what occasions, but it is always fun to find out what may be celebrated each day of a month!  And, with the hot weather baking many parts of the world, a chilled, delicious raspberry cream pie might be just what is needed to cool us all down.  That is the celebration for August 1 – raspberry cream pie day!

Created by Sara Deseran for the May 2007 Every Day with Rachael Ray magazine, this raspberry cream pie takes only fifteen minutes plus the chilling time, and serves six.  The ingredients include:

1 cup heavy cream; 1/8 teaspoon almond extract; 3/4 cup sugar; 1 envelope unflavored gelatin; 1/2 cup water; one 10-ounce package frozen raspberries, 1 teaspoon fresh lemon juice, one 9-inch pie crust, baked and cooled.

Using an electric mixer or whisk, beat the cream and almond extract until peaks form. Set aside.

In a saucepan over medium heat, bring the sugar, gelatin, and 1/2 cup water to a simmer and stir until the sugar and gelatin dissolve.  Remove from heat, add the berries and lemon juice, and stir until the mixture begins to thicken.

Fold the whipped cream into the berry mixture and spread into the pie crust.  Refrigerate until set, a few hours or overnight.  Enjoy!
